Vegan Chocolate Waffles

I’ve asked you on Instagram if you wanted to have the recipe for my very easy and simple vegan chocolate waffles, that I love eating on lazy Sundays to treat myself. A lot of you said yes, so here we are. By the way: This recipe also makes great pancakes. The only difference is the amount of water (or plant-based milk) you add. You want the batter to be very sticky for the waffles, and more fluid for the pancakes. So, without further ado, here is the recipe:
- 1 cup of oats (finely blended into a flour with your blender or food processor)
- 2-3 tsp of cocoa powder
- 1/2 tsp of baking powder
- 1 tsp of cinnamon
- 1-1 1/2 smashed bananas
- 1 flax egg (1tbsp of flaxseeds combined with 2 tbsps of water)
- water (as much as you need to get the desired consistency)
- optional: some vanilla extract
- as a topping: almond butter (or any other nut butter), (frozen) berries or other fruits
Simply combine all of the dry ingredients. After they are mixed together properly, add the wet ingredients. Slowly add as much water as you need to get the desired consistency.
A little tip: When you have problems smashing the bananas properly, simply put them in the microwave. After one to two minutes, they should be heated up a little bit. They have the perfect “smashing” consistency, when they lost a bit of water, too.
The next step depends highly on your waffle maker. I use medium heat and wait till I can remove the lid without any dough sticking to the upper part.
As far as toppings go, you can use whatever your heart desires. One thing I like doing is mixing some nut butter (I prefer almond butter) with some water and drizzle it on top of my waffles. I love eating them with frozen berries, but sometimes I use other fruits like apples or pears instead.
